What We're Eating This Week: 4 Easy Family Dinner Ideas
I'm always looking for ways to make meal planning just a little easier, so I thought I'd start by sharing what's on our menu. I know these types of posts are helpful for me when deciding what to make for the week. Here's what I'm making for our family of four:
Thai Peanut Chicken Bowls
This one has tender bites of chicken with a creamy peanut sauce that's served over rice with veggies. It's one of those dinners that's a little more exciting than basic chicken and rice!

Mom Tip💗
I usually will cook the rice, cut the peppers, and then prep the sauce all during nap time. That way, when 4:30pm rolls around, all I'm doing is adding things to the skillet - which helps cut down on the mental demands during the after school transition.
Marinated Flank Steak (w/ Brianna's)
We're pairing a marinated flank steak - using Brianna's Classic Steak Marinade - with roasted red skin potatoes and a fresh salad. I love meals like this because they're simple, balanced, and don't require a complicated recipe.
Our simple strawberry salad (...that actually tastes really fancy):
Chopped romanie lettuce or spring mix
Fresh strawberries, sliced
Crumbled feta cheese
Chopped pecas
Dried cranberries
Just toss everything together and add the dressing before serving. It's such an easy way to add something fresh and colorful to dinner!

Mom Tip💗
If you haven't tried Brianna's Classic Steak Marinade, you totally should! I usually can get two marinades out of one bottle. It's so easy, yummy, and really elevates the steak at home experience.
Lemon Chicken 'Dump + Bake'
This is one of my favorite meals to cook when I don't feel like cooking! A simple chicken-and-rice meal with lemon, seasoning, and asparagus. Minimal prep and fewer dishes are always a win in my book. It's flavorful, satisfying, and the kids always ask for seconds too!

Mom Tip💗
Just make sure to follow the recipe's instructions to cover with foil to allow the rice to cook through properly. This recipe is a good one to double up/freeze for later. Thank you to whoever came up with 'dump + bake' dinners🙌
Honey Balsamic Chicken Thighs
For this meal, we're making honey balsamic grilled chicken thighs with halloween-themed ravioli and roasted asparagus. We picked up this pumpkin and bat ravioli from Costco. I love adding a lil seasonal fun to our meals, especially when it doesn't require much extra effort!

Mom Tip💗
Keep a few easy sides, like refrigerated ravioli or frozen veggies, on hand. They make it much easier to put together a complete dinner without having to prepare everything from scratch.
I hope these dinner ideas give you a little inspiration for your own weekly cooking! I'm always looking for simple ways to make feeding our family easier, especially during this busy season of motherhood.
